Creamy Kale Caesar Salad
Wet Ingredients
½ tsp Worcestershire sauce
2 tsp Dijon mustard
1½ tbsp fresh lemon juice
3 tbsp extra virgin olive oil
⅓ cup mayonnaise
Dry Ingredients
⅓ cup finely grated Parmesan, plus more for topping
Vegetables & Produce
1 small garlic clove, finely grated
5–7 large curly kale leaves
Seasonings
¼ tsp kosher salt
¼ tsp freshly ground black pepper
Instructions
1. Prep the kale.
Remove the thick center stems and chop the kale into small bite-size pieces. Wash and dry thoroughly.
2. Make the dressing.
Whisk together mayonnaise, olive oil, lemon juice, Dijon, Worcestershire, garlic, salt, and pepper.
Stir in the Parmesan. If it's extremely thick, whisk in 1 tablespoon cold water. You want it thick and creamy but loose enough to completely coat the kale.
3. Dress it generously.
Pour about ¾ of the dressing over the kale. Using clean hands, massage it into the leaves for 1–2 minutes, making sure the dressing gets into all the curls.
Add the remaining dressing until it's as saucy as you like it!
4. Finish.
Let it sit for 10–20 minutes so the kale softens. Finish with plenty of freshly grated Parmesan and cracked black pepper.
Optional but very good!!
Add ½–1 tsp anchovy paste to the dressing for a true Caesar flavor.
Make ahead: You can dress this a couple of hours before dinner. Kale holds up much better than romaine and actually benefits from some time in the dressing.
