Mac & Cheese

Ingredients

Wet Ingredients
2 cans evaporated milk
1 stick butter

Dry Ingredients
1 box cavatappi noodles
1 pound cheddar cheese * Shred your own!

1 pound colby jack * Shred your own!
1/4 cup flour

Seasonings
Salt + pepper, to taste

Cajun Seasoning

Directions

  1. Preheat oven to 375°F.

  2. Layer cooked macaroni and shredded cheese in a baking dish (alternating layers).

  3. In a saucepan, melt butter over medium heat.

  4. Whisk in flour and cook 1 minute.

  5. Slowly pour in evaporated milk while whisking until the sauce thickens and becomes smooth. I usually do it 1/3 of the can at a time, stirring in between.

  6. Season lightly with salt + pepper, 2-3 tablespoons of Cajun seasoning.

  7. Pour the sauce evenly over the macaroni and cheese layers.

  8. Gently stir to coat everything.

  9. Bake 20–25 minutes, until lightly browned and bubbling. I also like to broil for the last 5 for a crust!
